  1. First, preheat your oven to 375 degrees Fahrenheit. Spray a 12 cup muffin pan with nonstick cooking spray or use muffin liners. Wash, peel and chop your apple and set aside. The chopped apple is added to the batter last.
  2. In a large mixing bowl, combine all dry ingredients and mix well. In a separate bowl, add the rest of the ingredients, which are the “wet” ingredients, and mix well. Add the “wet mixture” to the dry mixture bowl and mix well to combine all of the ingredients. Once the muffin batter is mixed, gently fold in the chopped apples.
  3. This recipe should fill 12 muffin cups. Fill each cup to just below the top of the cup or about 7/8 full. Place the muffin pan into the preheated oven, on the middle rack, and bake at 375 degrees Fahrenheit for 15 – 18 minutes.
  4. Once the muffins are finished baking, carefully remove them from the oven and allow them to cool for 5 to 10 minutes.
