  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Melt the butter in the microwave then transfer to a large mixing bowl. Stir in the brown sugar until combined. Beat the eggs, vanilla extract and applesauce into the sugar and butter. Add the dry quick oats, flour, baking soda, baking powder, salt, cinnamon, and nutmeg to the bowl and mix well to combine all ingredients. Finally, stir in the dried cranberries.
  3. Drop heaping, rounded tablespoons onto the parchment lined baking sheet, about 2 inches apart. Place the baking sheet on the center rack of preheated oven and bake for 8 – 12 minutes.
  4. Allow the cookies to cool for at least 5 minutes.
