Easy Greek Tzatziki Sauce

  1. Prep the cucumber: This step is important since it has a big impact on the texture of your sauce. Wash and dry the cucumber. Then, peel off the skin with a sharp knife. Quarter the cucumber lengthwise, then slice off the seeded area of the cucumber lengthwise. You will end up with just the “meat” of the cucumber. Place the 4 strips of cucumber in a paper towel and pat them dry, try to remove the excess moisture. Finally, chop up the cucumber and place it into the food processor, (or bowl if you are going to be mixing by hand).
  2. Next, add the rest of the ingredients to the food processor and pulse in 5-second intervals until you reach your desired consistency. I blended mine for a total of 25 seconds. Transfer the Tzatziki to an airtight container and refrigerate for at least 2 hours so that the flavors can develop.
