These amazing oatmeal muffins were created because my daughter was wanting to bake something yummy with mommy. How could I possibly say no to that? I wanted to make something that she would enjoy, but something that was also good for her. I thought about what she liked that was actually good for her, looked to see what ingredients we had, and then asked for her opinion. We shall bake some super yummy Oatmeal Muffins!

Healthy oatmeal muffins are great for breakfast or a snack. This oatmeal muffin recipe is made with oats, whole wheat flour, and applesauce. However, just because they are healthy does not mean they are dry or do not taste good. These oatmeal muffins are healthy and wholesome but also so moist and delicious. Most importantly, my daughter thinks they are “awesome”! That’s a winner in my book.

I used almost all organic ingredients to make my muffins. You can use whatever you have available. You can also use add-in ingredients like chopped fruit or nuts to give these muffins extra flavor, texture and nutrients. If you are craving sweets, toss in some chocolate chips for a tasty dessert muffin.

For variety, you can also mix and match. For example, I used a chopped and peeled organic pear for half the muffins, and the other half I left plain. In order to tell the difference between the muffins, I filled the pear oatmeal muffins in muffin cups and filled the plain oatmeal muffins straight into the muffin pan. If you are not using muffin cups, make sure that you spray the pan with non-stick cooking spray and they will pop out with no problem.

Healthy Oatmeal Muffins Ingredients

  • Quick Oats – dry, uncooked.
  • whole wheat flour – You can also use regular all-purpose flour.
  • light brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ground cinnamon
  • ground ginger
  • kosher salt
  • milk – I use 2% organic milk.
  • unsweetened applesauce
  • eggs
  • unsalted butter – melted or softened
  • pure vanilla extract
  • Optional: add-ins such as fruit, nuts or chocolate chips.

How to make Healthy Oatmeal Muffins

First, preheat your oven to 400 degrees Fahrenheit. Spray your muffin pan with nonstick cooking spray or use muffin cups.

In a large mixing bowl, combine all dry ingredients and mix. In a separate bowl, add the rest of the ingredients, which are the “wet” ingredients, and mix well. Add the “wet mixture” to the dry mixture bowl and mix to combine all of the ingredients.
Healthy Oatmeal MuffinsOnce the muffin batter is mixed, now is the time to gently fold in any additions, such as fruits, nuts or chocolate. I would only add 1 cup of add-ins for a full batch or a 1/2 cup for a half batch of muffins. After you have folded in any additional ingredients, or if you are making plain oatmeal muffins, you are ready to fill the muffin cups.Healthy Oatmeal Muffin batter

This recipe should fill 12 muffin cups. Fill each cup to just below the top of the cup. Place the muffin pan into the preheated oven, on the middle rack, and bake for 16-18 minutes.

Once finished, allow the muffins to cool for 5 to 10 minutes.

  1. I am so happy that I found Sum Of Yum and this recipe. I was in the mood for an oatmeal muffin, something healthy, not too sweet. Made these this morning using mini muffins as someone else suggested (400* for 11 mins). I added 3/4 c chopped green apple & 1/4 c pecans. I think they are FABULOUS, but not sweet enough for my teens. Next time I’ll use bananas instead of apple for sweetness. I LOVE THESE, and plan to always have some in the freezer. THANK YOU!

  2. These are absolutely wonderful! Made the first batch with 1/2 cup chopped nuts and 1/2 cup chopped apples. Used regular muffin tin, oh so good . Today used same recipe but used a minnie muffin tin. Bake for 11 minutes at 400 degrees. Again oh so good.

      No, do not replace the applesauce with eggs. The applesauce replaces oil for a healthier muffin. You can use an equal amount of vegetable oil as a substitute. There are already two eggs in this recipe, so do not double the eggs. I hope this helps.

    1. Hi Ashley! Yes, you can freeze these muffins! Allow the muffins to cool completely. Store in an airtight container or a large freezer bag and remove as much air as possible before sealing.

    1. I have not used coconut flour with this recipe, so I cannot say for sure. I would check your bag of coconut flour to see how much (%) regular flour you can replace with the coconut flour when baking. It usually says on the back of the package. I hope this helps.   8. Hi! These sound great! I’m planning to make these soon for my kiddos. I dont have applesauce on hand. Any suggestions of what i can swap that for? Was thinking maybe 1/2C peanut butter, or a banana!

      I do think applesauce is going to give you the best results. However, if your option is between peanut butter and bananas, I would use the banana due to the moisture content. I would use 1 full cup of mashed ripe bananas in place of the cup of applesauce. I hope this helps.

My name is Carla and I found this recipe last night I tweaked it a little bit instead of just now I used almond and instead of just the Nella a used half an hour and a half almond extract and I also added shaved almonds and then I put cranberries Best oatmeal muffins I have ever made and instead a ginger I added a teaspoon of honey I couldn’t believe the taste of them it was unbelievable I hope you don’t mind that I tweaked it a little bit

          I am so glad that you enjoyed them. Walnuts and dark chocolate sound awesome! The calories can vary, but around 140 calories per muffin.

          1. Ty, I’m making more today, I’m trying banana and walnuts, and I thought blueberry, so if I split the mix I can do both? Would the calories be about the same?

            1. Yes, you can split the mix. The muffins with walnuts and bananas would have more calories than blueberries. However, walnuts and bananas are good healthy calories, so I personally would not mind the few extra calories.
