  1. Preheat your oven to 400 degrees Fahrenheit. Spray your muffin pan with nonstick cooking spray or use muffin cups.
  2. In a large mixing bowl, combine all dry ingredients and mix. In a separate bowl, add the rest of the ingredients, which are the “wet” ingredients, and mix well. Add the “wet mixture” to the dry mixture bowl and mix to combine all of the ingredients.
  3. Once the muffin batter is mixed, now is the time to gently fold in any additions, such as fruits, nuts or chocolate. I would only add 1 cup of add-ins for a full batch. After you have folded in any additional ingredients, or if you are making plain oatmeal muffins, you are ready to fill the muffin cups.
  4. This recipe should fill 12 muffin cups. Fill each cup to just below the top of the cup. Place the muffin pan into the preheated oven, on the middle rack, and bake for 16-18 minutes. Once finished, allow the muffins to cool for 5 to 10 minutes.
