Baked Cajun Chicken Breasts

Ingredients

  • 2 lbs. fresh boneless skinless chicken breasts or 4 chicken breasts
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon Cajun seasoning see notes for Homemade Cajun Seasoning

Instructions

  • First, preheat your oven to 450 degrees Fahrenheit. Spray a baking dish with non-stick cooking spray. Place the chicken into the baking dish. Place the butter in a microwave safe bowl, cover with a napkin, then do 30 second intervals until the butter is melted. Brush the chicken breasts with the melted butter on both sides. Pour any excess butter over the chicken. Sprinkle the chicken with the Cajun seasoning on both sides.
  • Bake the chicken at 450 degrees Fahrenheit for 16 - 20 minutes or until the chicken is cooked to an internal temperature of at least 165 degrees Fahrenheit. I recommend using a meat thermometer. Cooking times can vary depending on the size and thickness. You do not want to overcook the chicken. I recommend checking at the 16 minute mark and go from there based on the temperature.
  • Once cooked, remove the chicken from the oven and cover the pan with foil. Allow the chicken to rest for at least 5 minutes before slicing. Spoon the butter over the chicken and serve.
