BBQ Chicken Skewers

Ingredients

  • 2 lbs. Boneless Skinless Chicken Breasts cut into 1-inch pieces
  • bbq sauce see notes for homemade recipe
  • marinade

Chicken Marinade:

  • 1/2 cup bbq sauce see notes for homemade recipe
  • 1/2 cup Orange juice
  • 2 tablespoons Soy Sauce
  • 1 tablespoon olive oil

Instructions

  • First, cut the chicken into 1-inch pieces, then place the chicken into a sealable storage bag. Mix the soy sauce, orange juice, olive oil, and barbecue sauce together to create the marinade. Pour the marinade over the chicken, seal the bag and shake to coat. Refrigerate for 3 hours or overnight.
  • Thread the marinated chicken onto the skewers. Reserve the marinade for brushing. Preheat the grill over medium-high heat. Brush the grates with oil.
  • Grill the chicken kabobs for about 10 - 12 minutes, turning occasionally for even cooking. Brush with the reserved marinade when turning the skewers. During the last couple minutes of cooking, brush with extra barbecue sauce, not the marinade. Ensure the chicken is cooked through and juices run clear.
  • Serve immediately with extra barbecue sauce for dipping and enjoy!

Notes

You will use 1/2 cup of barbecue sauce for the marinade, then another 1/2 cup for brushing at the end. Then serve with additional barbecue sauce on the side for dipping. My recipe for bbq sauce makes about 2 cups, which is the perfect amount.
