Ingredients

  • 1.5 lbs. Boneless Skinless Chicken Breasts cut into bite-sized pieces
  • 1 tablespoon peanut oil You can also use sesame oil or olive oil.

Teriyaki Sauce:

  • 1/3 cup Soy Sauce
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground ginger

Optional Garnish:

  • sesame seeds to taste

Instructions

  • Cut the boneless skinless chicken breasts into bite-sized pieces. You can make the teriyaki sauce in advance or while the chicken is cooking. (see below for instructions)
  • Heat the oil in a pan or wok over medium heat. Add the chicken to the wok and stir fry for about 10 minutes or until the chicken is just cooked through, stirring or tossing occasionally so that the chicken cooks evenly.
  • Once the chicken is cooked, add the sauce to the pan. Stir and toss to coat for 1 - 2 minutes, or until the sauce has thickened.
  • Garnish with sesame seeds and serve with steamed broccoli and rice or cauliflower "rice".

Teriyaki Sauce:

  • In a bowl, add the soy sauce, apple cider vinegar, honey, brown sugar, minced garlic, ground ginger, and cornstarch. Whisk to combine all ingredients until the sugar is dissolved and ingredients are thoroughly mixed.
