Ingredients

  • 2 lbs. baby red potatoes cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 3/4 teaspoon Kosher Salt or sea salt
  • 3/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Thyme
  • 1/2 teaspoon dried rosemary
  • freshly ground pepper to taste

Instructions

  • First, preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick cooking spray.
  • Wash your potatoes, leaving the skin on then cut them into bite-sized pieces. Place the cut potatoes into a large bowl. Combine the olive oil with all of the rest of the ingredients then pour over the potatoes and toss or stir to coat them. Pour the seasoned potatoes onto the prepared baking sheet.
  • Bake at 425 degrees Fahrenheit, on the center rack, for 30 - 45 minutes or until the potatoes are golden, tender and crispy. Stir the potatoes every 15 minutes to help with even browning. Check on them so they do not burn.
  • Once the potatoes have finished roasting, carefully remove from the oven, drizzle with a little more olive oil if desired and sprinkle with additional salt and pepper if needed. Serve immediately and enjoy!
