Ingredients

  • 24 oz. cauliflower riced fresh cauliflower*
  • 2 tablespoons avocado oil or olive oil.
  • 2 tablespoons lime juice juice of 2 limes.
  • 1 teaspoon garlic powder
  • 1 teaspoon salt or to taste*
  • 1/2 teaspoon pepper or to taste*
  • 2 tablespoons cilantro freshly chopped, add more to taste.

Instructions

  • Preheat your oven to 400 degrees Fahrenheit. Line a large, rimmed sheet pan with foil and spray with non-stick cooking spray. Place the riced cauliflower onto the prepared baking sheet.
  • Add the garlic powder, salt, and pepper to a small bowl then pour in the avocado oil and lime juice, then stir to combine. Pour the mixture over the riced cauliflower and stir to coat, then spread the cauliflower rice into an even layer.
  • Bake the cauliflower at 400 degrees Fahrenheit for 20 - 25 minutes, stirring halfway through so that it cooks evenly. The cauliflower should be soft and tender.
  • Once finished, remove from the oven, sprinkle with the fresh chopped cilantro, and stir. Transfer the cauliflower rice to a serving dish and serve with lime wedges on the side if desired.

Notes

  • If your cauliflower is not already “riced”, you can do it yourself a couple of different ways. Use a food processor to grate cauliflower florets into a “rice” texture by pulsing for 5 seconds at a time until you reach your desired consistency.
  • You can also omit the salt and pepper from the oil mixture and season the cauliflower rice to your personal preference once it has finished baking.
