Ingredients

  • 1 batch Roasted Red Pepper Sauce *click the link for recipe*
  • 12 oz. pasta pasta of choice cooked and drained.
  • 1 tablespoon olive oil
  • 3/4 cup heavy cream *see notes*
  • 1/4 cup parmesan *see notes*
  • 1/2 teaspoon Italian seasoning

Instructions

  • Make the Red Pepper Sauce first. See notes.
  • Boil your pasta according to the package instructions, and make sure to add salt to your pasta water. Drain well when finished.
  • While the pasta is cooking, add the olive oil to a large pan or skillet over low to medium heat and give it a swirl to coat the pan.
  • Add the heavy cream or almond milk and Italian seasoning to the pan and bring to a simmer, then keep at a simmer for 2 - 4 minutes, or until it begins to thicken. Add the red pepper sauce to the pan and whisk to combine.
  • Reduce the heat to low, then quickly whisk in the finely grated parmesan or cheese substitute.
  • Remove from heat, stir in the cooked and drained pasta and any additional ingredients that you would like to add. Serve garnished with additional cheese or substitute and chopped fresh herbs if desired. Enjoy!

Notes

  • Roasted Red Pepper Sauce - You can make this in advance for quick and easy meal prep.
  • heavy cream - vegan/non-dairy heavy cream or regular heavy cream for non-vegan. For a lighter version you can use almond milk but it may need to simmer a little longer to thicken.
  • parmesan - finely grated vegan parmesan cheese or regular parmesan cheese for non-vegan. You can also use nutritional yeast as a substitute for the vegan parmesan.
  • fresh herbs - I garnished my pasta with fresh chopped parsley but any fresh herbs will work.
Tip: If you want to thicken the sauce, add more cheese. If you want to thin the sauce, add more cream or milk.
