Ingredients

  • 4 - 8 small or large tortillas depends on the size of tortillas and how much you stuff them.
  • 2 cups shredded cheese Mexican blend, chihuahua cheese, or cheese of your choice.
  • 1 batch enchilada sauce see below

Enchilada Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons all purpose flour
  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle chili pepper
  • 1/2 teaspoon Kosher Salt
  • 2 tablespoons Tomato Paste
  • 2 cups chicken broth

Instructions

  • First, make the carnitas and enchilada sauce (see below).
  • Preheat your oven to 350 degrees Fahrenheit. Spray a 9 x 11 baking dish with non-stick cooking spray.
  • Assemble your enchiladas. Lay out the tortillas and spread a thin layer of the enchilada sauce over the tortilla. Top with carnitas and shredded cheese down the center of the tortilla, then fold over both sides. Place them into the prepared baking dish. Pour over the enchilada sauce. Top with shredded cheese. Bake at 350 degrees for 20 minutes or until sauce and cheese are bubbly.
  • Garnish with fresh cilantro and serve as is or with the toppings of your choice.

Enchilada Sauce:

  • In a small saucepan, heat oil over medium heat. Whisk in flour and seasoning to combine. Whisk in tomato paste. Slowly whisk in broth. Bring to a simmer and simmer for 8 - 12 minutes or until sauce has thickened. Not too thick, it will thicken more while baking.
