Ingredients

Strawberry Spinach Salad

  • 5 ounces fresh baby spinach
  • 2 cups fresh strawberries sliced
  • 1/4 cup goat cheese crumbled
  • 1/4 cup walnuts chopped *see notes

Balsamic Vinaigrette

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey optional
  • 1 teaspoon garlic minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Make a bed of spinach on your plate or in a bowl. Add the sliced strawberries, then sprinkle with the crumbled goat cheese and chopped walnuts.
  • In a bowl, whisk the balsamic vinegar, minced garlic, salt, and pepper until the salt is dissolved. Whisk in the olive oil until well blended. Add 1 teaspoon of honey to the mix if desired. This recipe will yield about 2 servings of dressing. Drizzle the balsamic vinaigrette, or the dressing of your choice, over the salad.

Notes

  • You can easily make a larger batch of dressing and refrigerate the extra dressing in an airtight container.
  • You can also add these Maple Glazed Pecans as an alternative or in addition to the walnuts. They add flavor and crunch!
