Creamy Fiesta Lime Coleslaw is so light and refreshing! This easy cilantro lime slaw recipe makes a wonderful side dish or topping for tacos.

Ingredients
12 - 14oz.coleslaw*
1/2cupGreek yogurt
1/2cupmayonnaise*
1/4cupfresh cilantro
1/4cuplime juice
2teaspoonsminced garlic3 - 4 cloves minced
1/2teaspoonground coriander
1/2teaspoonground cumin
salt and pepperto taste*
Instructions
Add the Greek yogurt, mayo, cilantro, lime juice, garlic, coriander, and cumin to a food processor, blender, or mixing bowl. Blend or whisk to combine the ingredients until the dressing is smooth and creamy.
Place the coleslaw mix into a large bowl. Pour the dressing over it and stir to combine. Season with salt and pepper. (see notes)
Serve immediately or cover and chill for 1 hour prior to serving to allow the flavors to meld, then give it a good stir prior to serving.
Notes
To make the coleslaw dressing, you can use a food processor, blender, or whisk by hand to combine the ingredients. I like to use a food processor since it really blends the ingredients together and makes a smoother dressing.
Tip: You can make the coleslaw dressing ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Wait to dress the coleslaw mix an hour before serving so that the slaw does not get soggy.
I used a bag of store-bought coleslaw mix that was a blend of shredded green cabbage, red cabbage, and carrots. They usually have 12 and 14-ounce bags available. Both sizes work with this recipe. If you would like to make your own cabbage slaw mix, feel free!
I used light mayo to cut out some calories. You can also use regular mayonnaise or avocado oil mayo.
I used 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground pepper, but you can season it to your liking.
You can easily double this recipe to serve more.
You can also toss in some Chili Lime Pepitas for added protein, flavor and crunch!
