Fiesta Lime Coleslaw is a delicious addition to so many Mexican dishes. It adds flavor, texture, and color, while also cooling off a spicy dish. This creamy cilantro lime slaw is also super quick and easy to make. You can have it ready in as little as 5 minutes!  

This easy coleslaw recipe is so creamy, crunchy, vibrant, and flavorful! It makes a great topping for tacos, enchiladas, burritos, sandwiches, burgers, pulled pork, chicken, ribs, seafood, and more. It also makes a refreshing side dish that would be perfect to serve at a summer barbecue or a Mexican Fiesta! You can easily double this recipe to serve more or even triple it to serve a crowd.

Fiesta Lime Slaw Ingredients

  • Coleslaw – I used a bag of store-bought cole slaw mix that was a blend of shredded green cabbage, red cabbage, and carrots. They usually have 12 and 14-ounce bags available. Both sizes work with this recipe. If you would like to make your own cabbage slaw mix, feel free! 
  • Fresh cilantro – If you are going to whisk the dressing by hand, finely chop the cilantro.
  • Lime juice – You can use bottled or freshly squeezed.
  • Greek yogurt – Full-fat yogurt tastes best, but I use low fat to cut down the calories and keep it light. 
  • Mayo – I used light mayo to cut out some additional calories. You can also use regular mayonnaise or avocado oil mayo.
  • Garlic – You can use freshly minced cloves of garlic or jarred minced garlic. – 
  • Coriander and Cumin – These spices add a lovely flavor that really compliments the slaw. 
  • Salt and Pepper – I used kosher salt and freshly ground black pepper.

How to Make Creamy Cilantro Lime Coleslaw

To make the creamy cilantro-lime slaw, first, make the coleslaw dressing. You can use a food processor, blender, or whisk by hand to combine the ingredients. I like to use a food processor since it really blends the ingredients together and makes a smoother dressing. Plus, it is super quick and easy!

Add the Greek yogurt, mayo, cilantro, lime juice, garlic, coriander, and cumin to a food processor, blender, or mixing bowl. Blend or whisk to combine the ingredients until the dressing is smooth and creamy.

Tip: You can make the coleslaw dressing ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Wait to dress the coleslaw mix an hour before serving so that the slaw does not get soggy.

Place the coleslaw mix into a large bowl. Pour the dressing over it and stir to combine. Season with salt and pepper.

Note: I used 1/4 teaspoon of kosher salt and 1/4 teaspoon of freshly ground pepper to season my slaw, but you can season to your liking.

Serve immediately or cover and chill for 1 hour prior to serving to allow the flavors to meld. Give it a good stir prior to serving. Enjoy!

Ingredients
