- 16 ounces coleslaw mix - I use a bag of organic coleslaw with shredded green cabbage, red cabbage, and carrots.
- 2 medium spring onions - or scallions sliced thin.
- ½ cup edamame - shelled edamame that has been cooked and cooled. *see notes*
- ½ cup peanuts
- 1 - 2 tablespoons toasted sesame seeds
Peanut Dressing
- 2 tablespoons peanut butter creamy peanut butter works best.
- 2 tablespoons tamari or soy sauce.
- 2 tablespoons apple cider vinegar
- 2 tablespoons lime juice
- 1 tablespoon toasted sesame oil
- 1 tablespoon brown sugar I use stevia brown sugar
- 1 teaspoon Sriracha
- ½ teaspoon garlic powder
- ½ teaspoon ground ginger
Peanut Dressing - The peanut dressing can also be made ahead of time and stored in an air-tight container in the fridge.
Edamame - Garlic Roasted Edamame, or you can buy bags of frozen mukimame (shelled edamame) and cook it in the microwave for a couple of minutes, then allow it to cool.
Optional Extra Ingredients
- Chili Lime Pepitas - Adds extra protein, flavor, and crunch!
- Garlic Roasted Almonds - Sliced or chopped.
- fresh herbs - chopped Thai basil and cilantro are great options!
- avocado - I love adding avocado for extra creaminess and healthy fat!
- crushed red pepper flakes - to make it a spicy Asian slaw!
- salt and pepper - I do not add any but you can add to taste if desired.
