- 1 lb. fresh asparagus trimmed
- 2 tablespoons olive oil divided
- 2 teaspoons garlic 3 cloves minced
- 4 oz. goat cheese crumbles
- 1/4 cup heavy cream
- 1/4 cup pecans chopped
- 1 tablespoon fresh herbs chopped
- salt and pepper to taste
Preheat the oven to 425 degrees Fahrenheit. Trim or break off the tough ends of the asparagus. Place the asparagus on a parchment-lined baking sheet, drizzle with 1 tablespoon of olive oil, then toss to coat. Spread the asparagus into a single layer and sprinkle with salt and pepper. Roast the asparagus for 12 - 15 minutes, or until tender. During the last few minutes of cook time, make the goat cheese sauce.
Heat 1 tablespoon of olive oil in a small saucepan over medium-low heat. Add the minced garlic to the pan and saute for 1 minute, or until fragrant. Add the heavy cream to the pan and stir. Reduce heat to low, then whisk in the goat cheese until the sauce is smooth and creamy. Stir in the freshly chopped herbs and remove from heat.
Plate the roasted asparagus and pour the goat cheese sauce over the roasted asparagus and sprinkle with chopped pecans. Serve immediately and enjoy!
