First, make the chipotle sofrito sauce, which can be made in advance, by following this link: Easy Sofrito Recipe
Prepare the tofu by slicing it into 5 slabs, then gently press between paper towels to remove as much excess water as possible. Crumble the tofu by hand.
Heat the oil in a skillet, add the crumbled tofu, and cook over medium heat for about 10 - 12 minutes, stirring every 3-4 minutes until evenly browned.
Sprinkle with all of the seasonings and stir to coat. Pour the sofrito sauce over the tofu and allow it to simmer for about 5 minutes. Lower the heat, stir, and allow it to simmer for 5 more minutes or until the sauce thickens, stirring occasionally.
Garnish with fresh cilantro and limes if desired and serve immediately. Enjoy!
Notes
tofu - organic super firm tofu, or high-protein tofu works best since it has the lowest water content. Extra firm tofu also works but you will need to press out more water.
