Easy Reuben Sandwich with corned beef, swiss cheese and sauerkraut on rye bread with homemade Thousand Island dressing. Ready in 5 minutes!

Ingredients

  • 1/4 lb. fully cooked, sliced corned beef
  • 2 slices of marbled rye bread
  • 1 slice swiss cheese
  • 1/4 cup sauerkraut drained
  • 1 tbsp unsalted butter

Thousand Island Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup sweet pickle relish
  • 1 tbsp lemon juice
  • 1 pinch salt and pepper or to taste

Instructions

  • First, butter each slice of bread on one side. On the other side, spread each slice with the dressing and top 1 slice with cheese. On the other slice of bread of cheese, place the corned beef, then put the sauerkraut on top of the corned beef.
  • In a skillet over low to medium heat, place both slices of bread, buttered side down, in pan. Cook until the cheese is melted and the bread golden, about 3 - 5 minutes.
  • With a flat spatula, carefully transfer the side with the corned beef and sauerkraut to a plate. Place the slice of bread with the melted cheese on top of the sauerkraut. I like to cut the sandwich in half for serving, your choice. Serve with more thousand island dressing on the side for dipping if desired.

Notes

To make Homemade Thousand Island dressing, just mix all of the ingredients in a small bowl until combined. Poof! You have Thousand Island dressing!
