Ingredients
1/4lb.fully cooked, sliced corned beef
2slicesof marbled rye bread
1sliceswiss cheese
1/4cupsauerkrautdrained
1tbspunsalted butter
Thousand Island Dressing
1/2cupmayonnaise
1/4cupketchup
1/4cupsweet pickle relish
1tbsplemon juice
1pinchsalt and pepperor to taste
Instructions
First, butter each slice of bread on one side. On the other side, spread each slice with the dressing and top 1 slice with cheese. On the other slice of bread of cheese, place the corned beef, then put the sauerkraut on top of the corned beef.
In a skillet over low to medium heat, place both slices of bread, buttered side down, in pan. Cook until the cheese is melted and the bread golden, about 3 - 5 minutes.
With a flat spatula, carefully transfer the side with the corned beef and sauerkraut to a plate. Place the slice of bread with the melted cheese on top of the sauerkraut. I like to cut the sandwich in half for serving, your choice. Serve with more thousand island dressing on the side for dipping if desired.
Notes
To make Homemade Thousand Island dressing, just mix all of the ingredients in a small bowl until combined. Poof! You have Thousand Island dressing!
