Ingredients

  • ½ cup olive oil
  • ¼ cup vinegar (white vinegar, red wine vinegar, or apple cider vinegar all work.)
  • ½ cup Parmesan, Romano, or Plant-Based Parmesan (grated)
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder (or 2-4 garlic cloves minced)
  • salt & pepper to taste (I use about ½ tsp of salt and pepper)

Instructions

  • Add the Italian seasoning, parmesan, garlic powder, vinegar, and lemon juice to a bowl and whisk to combine, then whisk in the olive oil. Season with salt and pepper to taste. Or you can add all ingredients to a mason jar, then shake well to combine.
Store the Italian dressing in an airtight container in the refrigerator until ready to use.

Creamy Italian Dressing

  • To make creamy Italian dressing, add all ingredients to a small food processor or blender, then blend to combine. This creates a thicker, creamier Italian dressing.

Notes

You can easily make a larger batch of dressing since this Northern Italian dressing pairs well with many types of salads, including pasta salad, like this Italian Tortellini Pasta Salad, and is also wonderful poured over chickentofu, seafood, and veggies like haricots verts or roasted asparagus, or used as a dip for bread. I hope you enjoy!
