Pear Salad with Honey Balsamic Dressing

- 2 ripe pears sliced
- 8 ounces baby spinach
- 1/4 cup walnuts see notes
- 1/4 cup dried cranberries
- 1/4 cup goat cheese crumbled
Honey Balsamic Dressing
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 1 tablespoon minced garlic
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
Make a bed of spinach on your plate or in a bowl. Add the sliced pears, then sprinkle with the crumbled goat cheese, dried cranberries, and chopped walnuts. Drizzle or toss in the honey balsamic vinaigrette. See instructions for the honey balsamic vinaigrette below.
Honey Balsamic Dressing
In a bowl, whisk the balsamic vinegar, honey, minced garlic, salt, and pepper until the salt is dissolved. Then whisk in the olive oil until well blended. You can refrigerate any extra dressing in an airtight container. see notes.
