Pumpkin Oatmeal Chocolate Chip Cookies are healthier than the average cookie but still such a decadent treat! They are perfect for the fall and holiday season.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup oats
  • 2 cups whole wheat flour or all-purpose flour
  • 1 1/2 cup semi sweet chocolate chips
  • 1 cup butter softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp pumpkin pie spice

Instructions

  • First, preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper and lightly spray or grease.
  • Soften 1 cup of butter in the microwave for about 30 seconds. Add the butter and sugar to a large mixing bowl and mix well. Add the beaten egg and vanilla to the bowl and mix to combine.
  • Add the flour, oats, baking soda, cinnamon and pumpkin pie spice to the mixing bowl and mix to combine. Then add the pumpkin puree and mix. Add the chocolate chips and fold into the mix.
  • Drop spoonfuls of cookie mix onto the parchment-lined baking sheets. The mix will make multiple batches of cookies.
  • Place cookies into the preheated oven and bake at 350 for about 12 - 15 minutes. Oven times may vary depending on oven and size of cookies.
  • Carefully remove cookies from oven and allow to cool for about 5 -10 minutes.

Notes

The dough will make multiple batches of cookies. I recommend that you use your first batch as the "test batch", to gauge how long you need to keep them in the oven to achieve the perfect cookie.
