Preheat your oven to 325 degrees Fahrenheit and line a large baking sheet with parchment paper.
Add the rum, brown sugar, oil, vanilla extract, cinnamon, allspice and salt to a large bowl and stir well or whisk to combine the ingredients until the brown sugar mostly dissolves into the liquid.
Add the nuts to the bowl, then stir until the nuts are all completely coated. Spread the nuts into a single layer on the parchment-lined baking sheet, then place the baking sheet onto the center rack of your preheated oven.
Roast the nuts for 10 minutes at 325 degrees Fahrenheit, then carefully remove them from the oven, stir, then return them to the oven for an additional 5 – 10 minutes. Check the nuts after 5 minutes to make sure they do not burn.
Remove the nuts from the oven and allow them to cool for at least 10 minutes. Sprinkle with extra salt if desired.
Notes
Nuts - A mix of raw unsalted nuts. I used raw pecan halves, walnut halves and whole almonds. I also tossed in some cashews for my daughter. You can use the nuts of your choice. Sometimes I just do a pecan and walnut mix since they are easily crushed to use as a topping.
