Haricots Verts Amandine or Almondine is French Green Beans with Almonds, an easy green bean recipe and healthy side dish that’s magnifique!
Green Beans Almondine
French green beans almondine is the English translation for haricots verts amandine, a classic French recipe of French beans with toasted almonds. It is a beautiful and vibrant French side dish that requires little effort, making it a great choice for weeknights, yet it is an elegant side dish worthy of accompanying a fancy meal. Since hericot verts almondine is a versatile recipe and good year round, it’s the perfect addition to the weekly dinner rotation and can be a lovely side dish to serve with Sunday brunch.
This green beans almondine recipe includes a variation that uses French Toasted Almonds to add a touch of sweetness. The almonds can also be sweet and savory. I love how the sweet French almonds enhance the flavor of this haricots verts recipe. Using the French toasted almonds makes a plant-based vegan green beans almondine. However, you can easily make plain buttery toasted almonds or toast the almonds in olive oil, if that is your preference. Either way, these French beans with toasted almonds are wonderful served as a side dish alongside main courses, including chicken and seafood, or tossed into other dishes like salads or pasta. I have listed a few pairings to try below.
I hope you enjoy the haricots verts almondine!

Haricots Verts Amandine Recipe Ingredients
The following Haricots Verts Amandine Recipe Ingredients can be switched up for variety. I use fresh organic ingredients to make hericot verts almondine. You can use regular green beans to make green beans almondine, but the French beans work best for this French recipe.
- Haricots Verts – French beans, a variety of green beans that are thinner, longer, and more tender than regular green beans. They also have a milder and more refined flavor since they are harvested younger. I recommend getting fresh organic haricots verts if available.
- French Toasted Almonds – These toasted almonds add a touch of sweetness to the beans, but you can also make savory almonds like these Garlic Roasted Almonds as a variation.
- Olive Oil / Butter – I use olive oil for a healthy vegan recipe, but you can use butter to make a more traditional French Haricot Verts Amandine.
- Shallots / Garlic – Fresh minced garlic or shallots are delicious with green beans and add so much flavor!
- Salt & Pepper – Add salt and pepper to taste.
- Lemon – Optional, but a squeeze of fresh lemon juice tastes great on green beans.
How to Prepare Haricot Verts Almondine
To prepare haricot verts almondine, or French green beans almondine, first make the French Toasted Almonds, then set aside to cool. You can also make savory toasted almonds by toasting them in butter or oil, with or without seasoning.
Next, prepare the haricots verts by blanching them first, then sauté, roast, or grill the blanched haricots. I prefer to sauté the blanched French green beans since it is the quickest cooking method and only requires one pan, but see the cooking methods listed below for the other ways to prepare green beans. Once the haricots verts are cooked, transfer to a serving dish and sprinkle with toasted almonds. Serve the haricots verts amandine with a squeeze of lemon juice if desired and enjoy!
How to Blanch Haricots Verts
Blanch the haricots verts in a pot of salted water for about 3 minutes, until tender-crisp, then transfer them to an ice bath to stop the cooking process. Blanching helps retain the haricots bright green color. Once they have cooled, drain and pat dry.
How to Cook Haricots Verts
To cook haricots verts or French green beans, either sauté, roast, or grill the haricots. I recommend sautéing the haricots verts since it is the quickest cooking method and produces the best result when making haricot verts almondine. See how to sauté haricots verts below. You can also make Grilled Green Beans or Roasted Green Beans to make green beans almondine. However, please be aware that they will not have the same tender-crisp texture or the bright vibrant color, but they are both delicious with toasted almonds, so take your pick.
Sautéed Haricots Verts
To make sautéed haricots verts for French green beans almondine, I use the same large pan I used to toast the almonds to sauté the blanched haricots.
To sauté the haricots verts, heat the olive oil in a large skillet over medium heat. Add the blanched French green beans and minced garlic or shallot to the pan, then toss with tongs or stir for about 3 minutes. Season with salt and pepper to taste.
Transfer the sautéed haricots verts to a serving dish and sprinkle with the French Toasted Almonds. Serve the haricots verts almondine with a squeeze of lemon juice if desired and enjoy!
