Creamy Red Pepper Pasta

Creamy Red Pepper Pasta

Pasta with creamy roasted red pepper sauce is super yummy! The sauce has a wonderful flavor and texture and is packed with nutrients. This creamy red pepper pasta recipe is very versatile and can be made vegan or vegetarian depending on your dietary needs and taste.

I made this pasta using my Roasted Red Pepper Sauce. You can easily customize this recipe to suit your personal preferences. For example, you can add the protein of your choice or extra veggies if you would like. If you want to keep it vegan, use Plant-Based Parmesan Cheese and try tossing in some Easy Baked Tofu. For a pescetarian pasta variation, try tossing in some Italian Roasted Shrimp, it pairs so well with the sauce! This pasta is also great paired with an Italian Salad and Garlic Bread

Creamy Red Pepper Pasta Ingredients

These creamy red pepper pasta ingredients are all vegan or vegetarian, depending on the ingredients that you choose to use. However, you can easily add things like chickenshrimp, or salmon to this yummy pasta to make it your own.

  • Red Pepper Sauce – This homemade sauce is healthy, nutrient-dense and flavorful!
  • pasta – I used penne pasta but you can use the pasta of your choice including pasta alternatives.
  • olive oil – I use organic EVOO
  • heavy cream – vegan/non-dairy heavy cream or regular heavy cream for non-vegan. For a lighter version, you can use almond milk but it may need to simmer a little longer to thicken.
  • parmesan – finely grated Plant-Based Parmesan Cheese, or regular parmesan cheese for non-vegan. You can also use nutritional yeast as a substitute for the vegan parmesan.
  • Italian seasoning
  • Fresh herbs – I garnished my pasta with fresh chopped parsley, but any fresh herbs will work. This is optional.

How to Make Creamy Red Pepper Pasta

To make the creamy red pepper pasta, first, make the Red Pepper Sauce. You can make it in advance and store it in an airtight container in the refrigerator until ready to use, which I highly recommend to keep meal prep quick and easy.

Next, boil your pasta according to the package instructions, and make sure to add salt to your pasta water. Drain well when finished.

While the pasta is cooking, heat the olive oil in a large pan or skillet over low to medium heat and give it a swirl to coat the pan.

Add the heavy cream or almond milk and Italian seasoning to the pan and bring to a simmer, then keep at a simmer for 2 – 4 minutes, or until it begins to thicken. Add the red pepper sauce to the pan and whisk to combine.

Reduce the heat to low, then quickly whisk in the finely grated parmesan or cheese substitute.

Tip: If you want to thicken the sauce, add more cheese. If you want to thin the sauce, add more cream or milk.

Finally, stir in the cooked and drained pasta and any additional ingredients that you would like to add.

Remove from heat and serve garnished with additional cheese or substitute and chopped fresh herbs if desired. Enjoy!
