  • Haricots Verts – French beans, a variety of green beans that are thinner, longer, and more tender than regular green beans. They also have a milder and more refined flavor since they are harvested younger. I recommend getting fresh organic haricots verts if available.
  • French Toasted Almonds – These toasted almonds add a touch of sweetness to the beans, but you can also make savory almonds like these Garlic Roasted Almonds as a variation.
  • Olive Oil / Butter – I use olive oil for a healthy vegan recipe, but you can use butter to make a more traditional French Haricot Verts Amandine. 
  • Shallots / Garlic – Fresh minced garlic or shallots are delicious with green beans and add so much flavor! 
  • Salt & Pepper – Add salt and pepper to taste.
  • Lemon – Optional, but a squeeze of fresh lemon juice tastes great on green beans.

Next, prepare the haricots verts by blanching them first, then sauté, roast, or grill the blanched haricots. I prefer to sauté the blanched French green beans since it is the quickest cooking method and only requires one pan, but see the cooking methods listed below for the other ways to prepare green beans. Once the haricots verts are cooked, transfer to a serving dish and sprinkle with toasted almonds. Serve the haricots verts amandine with a squeeze of lemon juice if desired and enjoy!

How to Blanch Haricots Verts

Blanch the haricots verts in a pot of salted water for about 3 minutes, until tender-crisp, then transfer them to an ice bath to stop the cooking process. Blanching helps retain the haricots bright green color. Once they have cooled, drain and pat dry.

To make sautéed haricots verts for French green beans almondine, I use the same large pan I used to toast the almonds to sauté the blanched haricots.

To sauté the haricots verts, heat the olive oil in a large skillet over medium heat. Add the blanched French green beans and minced garlic or shallot to the pan, then toss with tongs or stir for about 3 minutes. Season with salt and pepper to taste.

Transfer the sautéed haricots verts to a serving dish and sprinkle with the French Toasted Almonds. Serve the haricots verts almondine with a squeeze of lemon juice if desired and enjoy!

Ingredients

  • 1 lb. haricots verts fresh French beans or green beans
  • 1/2 cup French Toasted Almonds (or sliced almonds toasted in butter or oil)
  • 1 tbsp olive oil or butter
  • 2 shallots or garlic cloves minced
  • 1/2 tsp salt or to taste
  • freshly ground pepper to taste
  • 1 lemon optional squeeze of lemon juice for serving.

Instructions

  • Make the French Toasted Almonds, then set aside to cool. You can also make savory toasted almonds by toasting them in butter or oil, with or without seasoning.
  • Prepare the French green beans by blanching them first. Blanch the haricots verts in a pot of salted water for about 3 minutes, until tender-crisp, then transfer them to an ice bath to stop the cooking process. This gives them a bright green color. Drain and pat dry.
