Shrimp Scampi Zucchini Noodles
Shrimp Scampi Zucchini Noodles is a quick and easy dinner that is healthy, low-carb, gluten-free and super yummy! This dish is so light and fresh, but it is also delicious and satisfying. I love both the flavor and the texture.
When I say making this is quick and easy, I really mean it! I made this meal in less than 15 minutes and only used one pan! Quick, easy, delicious and healthy! I will definitely be making Shrimp Scampi with Zucchini Noodles on a regular basis from now on.
Zoodles
I remember the first time that I heard the word zoodles, it made me laugh! The zucchini “noodles”, or “zoodles”, are just spiralized zucchini. I love saying “zoodles”, it sounds so fun! Ironically, making the zoodles actually is fun! When I first received my spiralizer I was a bit unsure. But as soon as I started using it, I fell in love. It is so easy to use and the “noodles” come out perfect! I just keep thinking… what else can I spiralize?! I am sure I will be posting some new recipes using this in the future!

Shrimp Scampi and Zoodles Ingredients
- 3 to 4 medium to large zucchini
- 12 to 16 Jumbo Shrimp – peeled, deveined and cooked
- 1 cup cherry tomatoes – halved
- 2 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon lemon juice
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon sea salt
- freshly ground pepper to taste
- Optional: freshly grated parmesan for garnish
How to make Shrimp Scampi and Zucchini Noodles
First, prepare the vegetables by spiralizing the zucchini and halving the cherry tomatoes. While you are preparing vegetables, defrost the shrimp in cold water if you are using frozen shrimp.
In a large pan, over medium-low heat, add the olive oil and butter until melted. Then saute the garlic in the olive oil and butter for 1 minute. Next, add all of the rest of the ingredients to the pan, except for the zucchini. Saute the shrimp and tomatoes for 3 – 5 minutes, stirring frequently.
Finally, add the spiralized zucchini to the pan and saute for an additional 2 – 3 minutes. Serve while hot and garnish with freshly grated parmesan if you would like.

- freshly shredded parmesan cheese
