Pina Colada Smoothie

PiƱa Colada Smoothie that is healthy, vegan and dairy-free. It's like sunshine and a little tropical vacation in a glass!

Ingredients

  • 2 cups pineapple chunks fresh or frozen
  • 1 cup unsweetened coconut milk
  • 1 medium ripe banana fresh or frozen
  • 1 tbsp pure vanilla extract

Instructions

  • Add the banana and pineapple chunks to the blender. Then pour in the coconut milk and vanilla. Blend until smooth and creamy.
  • Pour into glasses and garnish with a slice of fresh pineapple. Serve immediately or pour into an airtight container and refrigerate for up to 1 - 2 days.

Notes

If you are wanting an alcoholic beverage, you can also add a shot of rum with the other liquids.
