This healthy piña colada smoothie is made using fresh pineapple and coconut milk, so it is naturally vegan and dairy-free. It is delicious for breakfast, a healthy snack or anytime you need a little yum in your tum! This smoothie makes a cool and refreshing summer treat for both kids and adults. And on a rainy day, it really is like sunshine in a glass!

Speaking of sunshine in a glass, I am in serious need of some sunshine! It feels like it has been raining forever here. It has rained so much that it created a river/pond behind my house. There are even ducks swimming in it! Do you know the Jimmy Buffett song lyrics “If you like piña coladas and getting caught in the rain”? Yes, I do like piña coladas! However, I do not like getting caught in the rain. It’s just not my thing. So, I made a piña colada smoothie while I sang and danced to Jimmy Buffett around a blender in my kitchen…

Making this piña colada smoothie is super quick and easy using a blender. This recipe is for a non-alcoholic piña colada smoothie, but feel free to add a splash of rum if you are in the mood for something more lively.

  • fresh or frozen pineapple chunks – Using frozen is great for summer.
  • unsweetened coconut milk
  • banana – fresh or frozen, cut in half. I always use ripe bananas.
  • pure vanilla extract

Optional: Rum!

How to make a Virgin Pina Colada Smoothie

First, add the sliced frozen banana and pineapple chunks to the blender. Then pour in the pineapple juice and coconut milk. Blend until smooth and creamy. Note: If you are wanting an alcoholic beverage, you can also add a shot of rum with the other liquids.

Pour into glasses and garnish with fresh pineapple. Serve chilled.

Can you make smoothies ahead? 

Yes! Making your smoothies ahead is super convienient and great for meal planning.

I like my smoothies chilled. So, I pour the smoothie into mason jars, secure the lid, and refrigerate for at least an hour or overnight. Smoothies stored in an airtight container will be good in the fridge for up to 1-2 days. I just grab the mason jar out of the fridge, shake it up and put a straw in it. Yum!

Ingredients

  • 2 cups pineapple chunks fresh or frozen
  • 1 cup unsweetened coconut milk
  • 1 medium ripe banana fresh or frozen
  • 1 tbsp pure vanilla extract

Instructions

  • Add the banana and pineapple chunks to the blender. Then pour in the coconut milk and vanilla. Blend until smooth and creamy.
  • Pour into glasses and garnish with a slice of fresh pineapple. Serve immediately or pour into an airtight container and refrigerate for up to 1 - 2 days.

Notes
