Ingredients

  • 5 ounces arugula
  • 3 - 5 spears asparagus fresh asparagus spears trimmed *see instructions for options*
  • 1 small avocado sliced
  • 1/4 cup almonds sliced *see instructions for options*
  • 1 ounce asiago cheese shaved or vegan option in notes.
  • salt and pepper to taste
  • Apple Cider Vinaigrette or the dressing of your choice (see notes for more dressing options)

Instructions

  • Prepare Ingredients:
    Dressing: Make the Apple Cider Vinaigrette or alternative options in the notes. You can make it in advance and store it in the refrigerator until ready to use.
    Asparagus: If you want to add roasted asparagus or sautéed asparagus, make it in advance or use fresh raw asparagus that is trimmed.
    Almonds: Make the French Almonds, Garlic Roasted Almonds or Dry Roasted Almonds in advance and slice them once cooled, or you can use store-bought sliced almonds.
    Slice the avocado and shave the asiago.
  • Assemble Salad:
    Add the arugula to a salad bowl. Add the sliced avocado, trimmed fresh asparagus, sliced almonds, and shaved asiago cheese. Drizzle the vinaigrette over the salad and toss to combine. Add salt and pepper to taste. Serve immediately and enjoy!
