This Arugula Salad combines nutritious fresh ingredients that all begin with the letter “A”, including asparagus, asiago, avocado, almonds, and a homemade apple cider vinaigrette. It’s a big bowl of healthy green goodness packed with lots of flavor, texture, vitamins, and Antioxidants. Plus, this vegetarian salad uses ingredients that are all low-carb and keto-friendly, including the dressing!

Salads are pretty versatile and you can easily adjust the ingredients and portion size to suit your needs. You can serve this arugula salad for lunch, as a light dinner, or as a side salad to accompany a main course like Pasta. If you want to make this a more filling dinner salad, toss in some Chicken, Italian Roasted Shrimp, hard-boiled eggs, Baked Salmon or Pan Seared Salmon, or some Easy Baked Tofu to keep it a vegetarian salad. These arugula salad ingredients all begin with the letter “A” to create a healthy vegetarian salad. You can easily toss in additional ingredients to make this salad your own.

  • Albacore or Ahi Tuna

How to Make Arugula Salad

To make this arugula salad, first, prepare your ingredients. I like to make batches of certain ingredients in advance to make meal prep quick and easy during the week.

Salad Dressing: You can make the Apple Cider Vinaigrette in advance and store it in the refrigerator until ready to use or you can use the salad dressing of your choice.

Asparagus: If you want to add roasted asparagus or sautéed asparagus, make it in advance or use fresh raw asparagus that is trimmed.

Almonds: You can make these Garlic Roasted Almonds or these Dry Roasted Almonds in advance and slice them once cooled, or you can use store-bought sliced almonds.

Next, prepare the rest of your ingredients. Slice the avocado and shave the asiago, then prepare any additional ingredients that you want to add.

Finally, add the fresh arugula to a salad bowl. Add the sliced avocado, trimmed fresh asparagus, sliced almonds, and shaved asiago cheese. Drizzle the vinaigrette over the salad and toss to combine. Add salt and pepper to taste. Add any additional ingredients or protein of choice. Serve immediately and enjoy!

  • 5 ounces arugula
  • 3 - 5 spears asparagus fresh asparagus spears trimmed *see instructions for options*
  • 1 small avocado sliced
  • 1/4 cup almonds sliced *see instructions for options*
  • 1 ounce asiago cheese shaved
  • 2 tbsp apple cider vinaigrette or the dressing of your choice *recipe link in instructions*

Instructions

  • Prepare Ingredients:
