Crispy grain-free protein power waffles are great for a sugar-free, dairy-free, gluten-free, low-carb, diabetic, or keto diet. These flourless protein waffles are wonderful for breakfast, lunch, dinner, and dessert since you can easily make them sweet or savory waffles. They are perfect before or after a workout with a Matcha Chai Latte or a Cinnamon Dolce Latte for extra energy! 

While testing this flourless protein waffle recipe, I did eat these waffles for breakfast, lunch, and dinner. I wanted to create the best waffle recipe without grains, protein powder, or baking powder, since baking powder is made with corn, which is a grain. So I made my own grain-free baking powder to make a grain-free waffle batter.

After eating copious amounts of waffles, I made the best grain-free waffles packed with protein, fiber, and vitamins. These grain-free power waffles are super yummy and highly addictive! However, after eating so many waffles, I felt like a big gluttonous waffle eater, so now I think it is time to eat a salad

Flourless Waffle Recipe Ingredients

These grain-free keto flourless waffle recipe ingredients are nutritious and packed with protein, fiber, vitamins, minerals, antioxidants, and heart-healthy omega-3s.

  • almond flour: superfine blanched almond flour.
  • dairy-free milk or plant milk: I use unsweetened almond milk, but you can use the milk of your choice.
  • flax: ground flaxseed meal. You can use golden or brown flax.
  • eggs: I use large organic pasture-raised eggs.
  • cream of tartar: activates the baking soda.
  • baking soda: This helps the waffles rise with the aid of cream of tartar or apple cider vinegar. 
  • salt: I used fine pink Himalayan salt.
  • stevia: or granulated sweetener of your choice. You can add extra for a sweeter waffle.

Optional:

  • avocado oil – makes waffles crispy. 
  • vanilla – pure vanilla extract. I only use this if I want a sweeter waffle. I would not add it to a savory waffle.
  • Chai Spice Mix – This adds a wonderful warm spice flavor to waffles.

Homemade Baking Powder

Homemade baking powder combines baking soda and cream of tartar to make a grain-free baking powder, since the cream of tartar activates the baking soda. You can also use apple cider vinegar to activate the baking soda, but it will add a slight flavor to the waffles, whereas cream of tartar will not.

How to Make Grain-Free Waffles

To make these high-protein, grain-free power waffles, first make the flourless waffle batter. In a mixing bowl, combine the almond flour, flax, salt, stevia or granulated sweetener of choice, baking soda, and cream of tartar, then stir well and set aside.

In a separate bowl, add the eggs and milk, then whisk to combine. Whisk in the avocado oil and vanilla if you are using it. 

Add the egg mixture to the dry ingredients and stir well to combine. Let the waffle batter sit for 10 minutes to thicken, then stir again until smooth. Stir in any extras, like chai spice or nuts if desired. 

Note: The waffle batter may seem thin at first, but it will thicken as the flax absorbs the liquid. Do not skip this step if you want perfect waffles. Tip: If the waffle batter is too thick after sitting for 10 minutes, add a tablespoon of milk. If it is too thin, add a tablespoon of almond flour.

Once the waffle batter is ready, preheat your waffle maker, then lightly spray with nonstick cooking spray. (I use a pure avocado oil spray.) 

Pour the waffle batter into the prepared waffle maker and cook to your liking. Repeat until the batter is gone. The number of waffles you make will vary depending on the size of your waffle maker. Serve immediately with any toppings that you would like and enjoy!

How to Store Waffles

Leftover waffles can be stored in the refrigerator, in an airtight container, for about 5 days. You can also store them for about 2 months longer in the freezer by placing the cooled waffles in a freezer bag. Just pop them in the toaster to reheat.
