In a mixing bowl, combine the almond flour, flax, salt, stevia or granulated sweetener of choice, baking soda, and cream of tartar, then stir well and set aside.In a separate bowl, add the eggs and milk, then whisk to combine. Whisk in the avocado oil and vanilla if you are using it.
Add the egg mixture to the dry ingredients and stir well to combine. Let the waffle batter sit for 10 minutes to thicken, then stir again until smooth. Stir in any extras, like chai spice or nuts if desired. (see notes)
Once the waffle batter is ready, preheat your waffle maker, then lightly spray with nonstick cooking spray. (I use a pure avocado oil spray.) Pour the waffle batter into the prepared waffle maker and cook to your liking. Repeat until the batter is gone. Serve with the toppings of your choice and enjoy! (see notes)
Notes
The waffle batter may seem thin at first, but it will thicken as the flax absorbs the liquid. Do not skip this step if you want perfect waffles. Tip: If the waffle batter is too thick after sitting for 10 minutes, add a tablespoon of milk. If it is too thin, add a tablespoon of almond flour.Note: The baking soda and cream of tartar make a grain-free baking powder, since the cream of tartar activates the baking soda. Apple cider vinegar works as an acid substitute for the cream of tartar.
How to Store Waffles
Leftover waffles can be stored in the refrigerator, in an airtight container, for about 5 days. You can also store them for about 2 months longer in the freezer by placing the cooled waffles in a freezer bag. Just pop them in the toaster to reheat.
