Chai chia pudding has a warm, sweet, and spicy flavor that is delicious and so comforting. It is one of my favorite flavors of chia seed pudding! The chia pudding is made with a homemade Chai Spice Mix that is super quick and easy to make, and can be used for many things.

I make a nutty chai chia pudding, since I am like a squirrel, and I enjoy having it with a Chai Matcha Latte. However, not everyone likes nuts as much as I do, so feel free to add the toppings of your choice.

This easy chia pudding is perfect for weekly meal prep. I divide and store my chia pudding in small, lidded jars, so it’s ready to go for breakfast, dessert, or whenever I need a healthy snack. The chia pudding is filling without weighing me down, and I feel good about eating it due to its numerous health benefits, which I have listed below. I hope you enjoy the chai chia seed pudding as much as I do!

Chia Seed Pudding Health Benefits

Chai chia seed pudding has many health benefits. Chia pudding is rich in fiber, protein, omega-3 fatty acids, antioxidants, vitamins, and essential minerals such as calcium, magnesium, and phosphorus. The nutrients in chia seeds can help reduce blood pressure, lower cholesterol, improve digestion, support weight management, reduce inflammation, help control diabetes, protect against chronic disease, and may help improve anxiety and depression.

The Chai Spice has a variety of health benefits as well, like boosting your immune system and metabolism, and chai is also good at improving digestion, reducing blood sugar, and inflammation. So, you can enjoy that yummy bowl of chai chia seed pudding and feel good about eating it!

Chai Chia Pudding Recipe Ingredients

These chai chia pudding recipe ingredients create a chia pudding that is dairy-free, sugar-free, low-carb, keto, and vegan. However, the ingredients can easily be adapted and the amounts adjusted to your personal preference.

  • Chia Seeds: I used organic chia seeds.
  • Chai Spice Mix: You can also use this homemade spice mix to make chai tea or a Chai Matcha Latte to go with your chia pudding. 
  • Plant-based milk: I used unsweetened almond milk for a sugar-free chia pudding.
  • Sweetener: I use liquid stevia. You can use the sweetener of your choice.
  • Vanilla Extract or Maple Extract: You can also add 1/2 of each, which is my preference.

Below are some chia pudding toppings that pair well with the flavor of chai, including a couple of warm chia pudding toppings that are perfect for fall and the colder months. Feel free to combine and add as many as you like!

Nutty Chia Pudding

I make a Nutty Chai Chia Pudding by adding a variety of roasted nuts with complementary flavors.

How to Make Chia Pudding

To make chia pudding, add the chia seeds and chai spice to a lidded container or mixing bowl, then add the milk, extract, and sweetener. Stir well, cover, and refrigerate for 1 hour. Stir again, then recover and refrigerate for at least an additional 3 hours, or preferably overnight. The longer it sits, the thicker it will become. Once the chia pudding has thickened, stir well, then do a taste test and add additional spice and sweetener if desired.

Transfer to a serving dish or keep stored in the fridge until ready to eat. (See below) Add the toppings of your choice and a sprinkle of chai if desired, then enjoy!

Store the chia pudding in an airtight container in the fridge until ready to eat. I like to divide my chia pudding amongst 4 lidded jars for easy meal prep. It stores well for up to 5 days.

Store any toppings, like fruit, nuts, or granola, in a separate container, then add them when you are ready to eat.
