This crustless French quiche florentine is vegetarian, keto, gluten-free, diabetic-friendly, and healthier than a traditional French quiche that is baked in a pie crust. In French, quiche sans pâte à la florentine means crustless spinach quiche, and this delicious crustless quiche is packed with lots of spinach! You can also add extra ingredients like mushrooms for variety. This no-crust quiche is easy to make and reheats well in the microwave, so it’s great for weekly meal prep. 

Quiche is good anytime of the day, but especially for brunch. Brunch is one of my favorite things in life, and this vegetarian French quiche florentine makes the perfect brunch food! For a fancy brunch, try serving your quiche with a composed salad, like this French Bistro Salad or this Pear Salad, and enjoy it with a Strawberry White Wine Spritz, a Cranberry Mimosa, or an Aperol Spritz. A quiche is also wonderful served with Haricots Verts Amandine, or  Asparagus with Goat Cheese Sauce. If you don’t care about carbs, these Breakfast Potatoes, easy Cheddar Biscuits, and French Baguette Garlic Toast are delicious additions as well.

Quiche Florentine Recipe Ingredients

These vegetarian French quiche florentine recipe ingredients can easily be adjusted to your preferences.

  • Eggs: I only use organic, pasture-raised eggs that are humane-certified.
  • Spinach: I used fresh organic baby spinach, but other dark leafy greens like arugula work well.
  • Milk: You can use whole milk, but heavy cream creates a richer quiche. Half and half and dairy-free milk also work.
  • Cheese: Gruyère, Swiss, Gouda, and goat cheese are all delicious options. 
  • Olive Oil: Good quality EVOO.
  • Garlic: I use organic minced garlic.
  • Herbs and Spices: Chives, parsley, thyme, and tarragon are delicious additions.
  • Salt & Pepper: To taste.

How to Make Crustless Spinach Quiche 

This is how to make crustless spinach quiche…

First, preheat the oven to 350 degrees Fahrenheit and grease a 9-inch pie pan.

In a large sauté pan over medium heat, heat the olive oil and add the garlic. Sauté for 1 minute, then add the spinach to the pan. The spinach may need to be added in batches depending on the size of your pan. Sauté the spinach with a sprinkle of salt and pepper until it is wilted. Drain the spinach well, then transfer to the prepared pan with any additional add-ins, and spread into an even layer. Sprinkle the cheese evenly over the vegetables.

In a mixing bowl, whisk the eggs with the milk and seasonings. Pour the egg mixture into the pan, and gently shake to combine, then sprinkle with herbs.

Place onto the center rack of your preheated oven and bake at 350 degrees Fahrenheit for 30 – 40 minutes or until the eggs are set.

Carefully remove the quiche from the oven and allow it to cool for 10 minutes. Season with salt and pepper to taste, serve, and enjoy!

Ingredients

  • 6 large eggs
  • 12 ounces fresh baby spinach
  • 1 cup Gruyere (or other shredded cheese - see notes)
  • ¼ cup whole milk (heavy cream for a richer quiche)
  • 1 tablespoon olive oil
  • 1 tablespoon garlic (2-3 cloves minced)
  • 1 tablespoon thyme (plus any extra freshly chopped herbs like chives- see notes)
  • teaspoon nutmeg
  • teaspoon cayenne pepper
  • ¼ teaspoon salt (add more to taste)
  • teaspoon freshly ground pepper (add more to taste)
