Classic Hummus

- 1 15 oz. can chickpeas drained and rinsed
- 1/4 cup tahini
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon minced garlic 2 cloves
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
- 2 tablespoons cold water add more if needed
Add the olive oil, minced garlic, cumin, paprika, salt, tahini and lemon juice to the food processor and blend in 15-second intervals, scraping the sides and bottom in between intervals, for 1 minute or until the ingredients are fully combined.
Add the drained and rinsed chickpeas to the mix and blend in 30-second intervals, scraping the sides in between intervals, for about 2 minutes or until the hummus is smooth and creamy.
To create a smoother hummus, add 2 tablespoons of cold water to the hummus and blend for 1 more minute or until you reach your desired consistency. You can add a little more water if necessary. Do a taste test and add additional salt if needed.
- For serving, you can drizzle the hummus with a little olive oil and a sprinkle of paprika on top, or you can add any other toppings you would like.
- The hummus can be refrigerated in an airtight container for about 5 days.
