First, preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick cooking spray.
Wash your potatoes, then peel and cut them into bite-sized pieces. You can leave some of the skin on for extra nutrients, just make sure that you cut off any bad spots. Place the cut sweet potatoes into a large bowl.
In a small bowl, whisk to combine the olive oil, honey, garlic powder, and cinnamon. Pour the mixture over the sweet potatoes and toss to coat. Then pour the sweet potatoes onto the prepared baking sheet in a single layer. Sprinkle them with salt and pepper.
Bake at 425 degrees Fahrenheit, on the center rack, for about 30 minutes, or until the potatoes are tender. Stir the potatoes every 10 - 15 minutes to help with even browning. Keep an eye on them so they do not burn. Once finished, carefully remove them from the oven, drizzle with a little extra olive oil and serve. You can sprinkle them with additional salt and pepper if needed.
