Roasted Sweet Potatoes

Roasted Sweet Potatoes that are perfectly seasoned, caramelized and so flavorful are super easy to make! Sweet potatoes are so versatile and make a wonderful healthy side dish that will accompany so many meals. 

These roasted sweet potatoes are both sweet and savory and they have a wonderful flavor combination of honey, cinnamon, and garlic. They are oven-roasted on a sheet pan until they are lightly caramelized, a little crispy and absolutely delicious! You can serve them with almost anything and everyone loves them, including kids! Are Sweet Potatoes Healthy?

Yes, they are! Sweet potatoes are full of antioxidants, vitamins, and minerals including vitamin A, vitamin C, B vitamins, beta carotene, potassium, and fiber. They are also low in fat. The skin is very high in nutrients so feel free to leave some skin on. Sweet potatoes also have more fiber and are lower on the glycemic index than white potatoes. So eat up, sweet potatoes are good for you!

Roasted Sweet Potato Ingredients:

  • sweet potatoes
  • olive oil
  • honey
  • cinnamon
  • garlic powder
  • kosher salt
  • freshly ground pepper

How to make Roasted Sweet Potatoes:

First, preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick cooking spray. Wash your potatoes, then peel and cut them into bite-sized pieces. You can leave some of the skin on for extra nutrients, just make sure that you cut off any bad spots. Place the cut sweet potatoes into a large bowl. Tip: Long, thin sweet potatoes are easier to slice than the thicker ones.

In a small bowl, whisk to combine the olive oil, honey, garlic powder, and cinnamon. Pour the mixture over the sweet potatoes and toss to coat. Then pour the sweet potatoes onto the prepared baking sheet in a single layer. Sprinkle them with salt and pepper.

Bake at 425 degrees Fahrenheit, on the center rack, for about 30 minutes, or until the potatoes are tender. Stir the potatoes every 10 – 15 minutes to help with even browning. Mine were perfect after 30 minutes, but ovens can vary so keep an eye on them so they do not burn.

Roasted Sweet Potatoes

Once finished, carefully remove them from the oven, drizzle with a little extra olive oil and serve. You can sprinkle them with additional salt and pepper if needed.
