Rosemary Roasted Radishes

This rosemary roasted radishes recipe has a mildly sweet flavor and makes a lovely spring side dish that is healthy, low-carb, and delicious!

Ingredients

  • 1 lb. radishes halved or quartered, depending on size.
  • 1 tablespoon avocado oil
  • 1 tablespoon rosemary finely chopped fresh rosemary or ½ teaspoon of crushed dried rosemary.
  • ½ teaspoon garlic powder not garlic salt
  • ½ teaspoon salt or to taste.
  • pepper freshly ground black pepper to taste.

Instructions

  • Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper. Clean and trim the radishes, then halve or quarter them, depending on their size.
  • Place the radishes into a mixing bowl, then toss with avocado oil to coat. Sprinkle with garlic, rosemary, salt, and pepper, then toss again to coat the radishes in the seasoning. Optional: Allow them to sit in the bowl for 10 - 15 minutes to "sweat out" some of their liquid for a crispier radish.
  • Transfer the seasoned radishes to the lined baking sheet and spread them into a single layer. Place onto the center rack of your preheated oven and roast at 400 degrees Fahrenheit for 15 minutes. Stir, then roast for another 15 - 20 minutes or until cooked to your liking. Season with additional salt and pepper if needed, serve as desired, and enjoy!

Notes

This recipe can easily be doubled, and the ingredients adjusted to taste.
  • Radishes: I used red radishes in this recipe, however, there are a variety of radishes to choose from, including Cherry Belles, French Breakfast radishes, and Easter Egg radishes. 
  • Avocado oil: Avocado oil is perfect for roasting since it has a high smoke point, but olive oil works as a substitute.
  • Rosemary: Finely chopped fresh rosemary or dried crushed rosemary. I also like to sprinkle the radishes with chopped parsley.
  • Garlic powder: Do not use garlic salt.
  • Salt & Pepper: I used fine Himalayan pink salt and freshly ground pepper. You can use more or less, but I like to start with less and add more at the end if needed.

How to Serve Roasted Radishes

Roasted radishes are a wonderful side dish with Chicken and Seafood or tossed into Salads or Pasta. They are also yummy sprinkled with nuts, like crushed Roasted Pistachios, and French Toasted Almonds, dipped in Hummus, or drizzled with Dijon Dressing, and they are a beautiful addition to a Mezze Platter.
