- 2 cups peanuts raw shelled peanuts ( I use redskin Spanish peanuts)
- 2 teaspoons avocado oil
- seasoning (The spicy Mexican seasoning Ingredients are below, see notes for more seasoning options.)
Preheat your oven to 325°F and line a large baking sheet with parchment paper.
Add the raw shelled peanuts to the prepared baking sheet, then pour the avocado oil over the peanuts. Stir well until completely coated. Spread the peanuts into a single layer on the parchment-lined baking sheet. Place the baking sheet onto the center rack of your preheated oven and roast for 10 minutes.
While the peanuts are roasting, select the spicy peanut seasoning of your choice. (See Notes) Add the seasoning ingredients of your selected spice blend to a small bowl, then stir well to combine.
Once the peanuts have roasted for 10 minutes, carefully remove them from the oven, then sprinkle with your choice of seasoning. Stir again to coat the peanuts in the seasoning. Return the seasoned peanuts to the oven and continue roasting them for an additional 6 – 10 minutes, watching them so they do not burn. (see notes)
Once the peanuts have roasted to your liking, carefully remove them from the oven, give the pan a gentle shake, then allow the peanuts to cool completely for at least 10 - 15 minutes. Sprinkle with additional salt if desired. Serve and enjoy, or store them in an airtight container to save for later.
Roast the peanuts with just the oil for the first half, then add the seasoning for the second half of the roasting time to prevent the seasonings from getting burnt, since some seasonings may burn if they are in the oven for too long. Check on the peanuts after 5 minutes during the second half of the roast time so they do not burn. The size of peanuts and ovens can vary. I used Spanish Peanuts, which are smaller than other types of peanuts. The peanuts should be golden and fragrant, not too dark or burnt. I have tried several methods for making seasoned peanuts, and this method makes perfectly roasted peanuts with seasoning that sticks.
Spicy Peanut Seasonings
These spicy peanut seasonings include savory, spicy, and tangy seasoning blends for Spicy Mexican Peanuts, Cajun Peanuts, and Chili Lime Peanuts. You can easily adjust the seasonings to make them more or less spicy, ranging from mild to hot.
Spicy Mexican Peanuts Recipe Ingredients
The spicy Mexican peanut ingredients can all be adjusted to taste. Spicy Mexican peanuts are savory, spicy, and tangy, but you can omit the Tajin to remove the tangy flavor and just use a combination of sweet, smoky, and fiery seasonings from different types of chilis.
Chili Lime Peanuts
Tajin chili lime peanuts are a variation of the spicy Mexican peanuts, but have a mild, tangy flavor. For a sweet and spicy variation, follow my recipe for Chili Lime Pepitas, which does not include Tajin seasoning.
- 1 tablespoon of Tajin seasoning
- 1/4 teaspoon of coriander
- 1/4 teaspoon of garlic powder
- a sprinkle of salt if desired
Cajun Peanuts Recipe Ingredients
This spicy Cajun peanuts recipe has a wonderful combination of savory flavors with a nice spicy kick.
