- 5 - 8 ounces fresh baby spinach or greens of choice.
- 2 cups fresh strawberries sliced
- ¼ cup walnuts chopped *see notes
- ¼ cup goat cheese crumbled
Balsamic Vinaigrette
- ½ cup olive oil
- ¼ tablespoons balsamic vinegar
- 1 tablespoon garlic minced
- ½ teaspoon kosher salt (or to taste)
- ¼ - ½ teaspoon freshly ground black pepper (or to taste)
Make a bed of spinach on your plate or in a bowl. Add the sliced strawberries, then sprinkle with the crumbled goat cheese and chopped walnuts.
In a bowl, whisk the balsamic vinegar, minced garlic, salt, and pepper until the salt is dissolved. Whisk in the olive oil until well blended. Drizzle the balsamic vinaigrette over the salad, or use the dressing of your choice. (See notes)
- You can make the dressing in advance and refrigerate any extra dressing in an airtight container to use with other salads.
