This Italian herb bread recipe is made in a bread machine and comes out perfect every time. It is so good that it is dangerous! I have to try to control myself so that I do not eat the whole loaf of bread! It is my favorite bread to dunk in some soup, make a sandwich with or to just dip in some olive oil with parmesan and pepper.I usually try to limit my carb intake but that all goes out the window when I make this bread. It goes well with so many things, like this easy Italian Salad.
This recipe for Italian herb bread can be made the traditional way or in a bread machine. It is a very simple bread that is so easy to make and it tastes so good! For this recipe post, I made my bread in the bread machine. The bread machine is great when you have lots to do, like making some yummy soup to go with the bread.

Italian Herb Bread Ingredients
- water
- flour – I used organic all purpose flour, you can also use bread flour.
- Extra Virgin Olive Oil – I use organic.
- sugar
- salt – I used kosher salt
- dried Italian seasoning – I used organic Italian seasoning (you can use a mixture of oregano, basil, sage, thyme, rosemary and marjoram)
- 1 packet of Active Dry Yeast (1/4 oz.)
Note: For this recipe, I used a 2 lb. bread machine.
How to make Italian Herb Bread in a Bread Machine
First, add the water and olive oil to the bread pan. Then, add all of the dry ingredients, except for the yeast, to the bread pan. Finally, make a small depression into the flour with your finger and add the dry yeast to the depression. Make sure you do not allow the yeast to come in contact with any liquids.
Select the basic setting on the bread machine and press start. Once the bread is finished, allow it to cool for 10 minutes. Enjoy!

How would I adjust this to make the recipe in a 1 1/2 pound bread machine? The recipe is too large for my smaller machine. Thanks! Lorraine

convert fraction to decimal ( use google )
multiply the ingredients x .75.
3 table sp of sugar would be 3.00 x .75 = 2.25 or 2 1/4
1/3 cup oil would be 0.33 x .75 = 0.2475 round to .25 or 1/4

Love this bread easy to cut and it tastes so yummy. The first time I made my yeast must have been bad because it didn’t rise well. I tried it again and it was so good. Thank you for a great recipe.

I had that issue too and I did this, and it was amazing. I took the dense, lower-than-usual loaf, and refrigerated a day or two (in a ziplock) although I am sure fresh would work. It’s just quite soft, and a little drier makes the baking portion of my “invention” faster.
Slice a few thick slices according to what you need, cube them in your preferred size, toss them onto a sheet pan or cookies sheet and use plenty of olive oil to coat them (to taste as far as oil) and put them into a low 350 oven and toast. Watch closely, stir around as they toast, and when they reach warm crunchiness remove to cool. They are the best croutons ever, they can be smashed for amazing bread crumbs, and honestly, I like to snack on them a little lol. No wasting a loaf of delicious bread!
Oh and the sausage, egg and cheese casserole everyone loves. Use this dense bread, slightly dry from slicing and leaving out a bit. Oh. My. God.
