Roasted Asparagus with Goat Cheese Sauce and Pecans is a wonderful healthy side dish recipe high in protein and fiber, and keto friendly!
Roasted Asparagus with Goat Cheese Sauce
This roasted asparagus with creamy garlic herb goat cheese sauce and chopped pecans is absolutely delicious! The flavors and textures pair so well together, creating a side dish that tastes complex and maybe even a little fancy, yet it is so quick and easy to make!
Roasted asparagus with goat cheese sauce can really elevate a meal. This easy asparagus recipe is very versatile and can be served as a side dish with so many things. A couple of my favorite pairings are serving it with Baked Salmon or Italian Roasted Shrimp, which are also low-carb, gluten-free, and perfect for a keto diet. However, this yummy asparagus can also be served as a light vegetarian meal on its own since it is filled with protein, fiber, and lots of nutrients!
Asparagus is one of my favorite vegetables and I make it often, so I like to change it up for variety. For extra flavor and complexity, try adding some chopped Maple Bourbon Pecans for a touch of sweetness or some sliced Garlic Roasted Almonds for a more savory dish. If you don’t eat nuts, this asparagus is excellent topped with Sautéed Bourbon Mushrooms. Yum!
Have some extra asparagus on hand? Try making some Pasta Primavera or Shrimp and Asparagus with Garlic Butter.
How to Make Roasted Asparagus with Goat Cheese Sauce
To make the roasted asparagus with goat cheese sauce, roast the asparagus first, then make the sauce during the last few minutes of baking time. That way the asparagus and sauce are ready around the same time.
Roasted Asparagus
Preheat the oven to 425 degrees Fahrenheit. Trim or break off the tough ends of the asparagus.
Place the asparagus on a parchment-lined baking sheet, drizzle with 1 tablespoon of olive oil, then toss to coat. Spread the asparagus into a single layer and sprinkle with salt and pepper. Roast the asparagus for 12 – 15 minutes, or until tender.
Garlic Herb Goat Cheese Sauce
Heat 1 tablespoon of olive oil in a small saucepan over medium-low heat. Add the minced garlic to the pan and saute for 1 minute, or until fragrant. Add the heavy cream to the pan and stir. Reduce heat to low, then whisk in the goat cheese until the sauce is smooth and creamy. Stir in the freshly chopped herbs and remove from heat.
Plate the roasted asparagus and pour the goat cheese sauce over the roasted asparagus and sprinkle with chopped pecans. Serve immediately and enjoy!
