Tomato Basil Soup
Tomato Basil Soup is delicious and healthy comfort food that the whole family can enjoy! This easy Instant Pot tomato soup recipe is ready in 20 minutes, making it perfect for busy weeknights. It also includes instructions for creamy tomato soup. Both variations are super flavorful, but the creamy tomato basil soup is my personal favorite. If you do not have an Instant pot, it can also be made on the stove or in a slow cooker.
Getting kids to eat enough fruit and veggies can sometimes be a bit difficult. My daughter is a very picky eater. However, she was willing to try Panera’s tomato soup and she actually liked it! So I decided that I must make this magical tomato soup that she will actually eat. I must admit that I was a bit nervous for her to try it. Will she like it or will she decide that she no longer likes tomato soup? Lots of pressure for Mom to get it right!
The verdict is in… She ate it, she liked it, and she said it was way better than Panera’s tomato soup! Yes, she actually said that! It was a true moment of pride and joy for me. I hope that you enjoy the Instant Pot Tomato Basil Soup as much as she did!

How to make Tomato Soup in an Instant Pot
Making tomato soup in an Instant Pot or pressure cooker is super quick and easy. You can have it ready in 20 minutes! If you do not have an Instant pot, it can also be made on the stove or in a slow cooker.
Set the Instant Pot to the “saute” setting on high. Add the olive oil to the pot and heat. Add the chopped onions, carrots, and minced garlic to the pot. Cook uncovered for 3 – 5 minutes, stirring occasionally until the vegetables are tender.
Add the dried herbs, salt, and pepper to the pot and stir. Add the tomato paste and crushed tomatoes to the pot and stir. Then pour in the broth and stir. Cover with the lid and lock it into place. Select “pressure cook” setting on high pressure and set the timer for 10 minutes.
When the soup is finished cooking, follow the manufacturer’s instructions to quick-release pressure or allow a natural release. Once the pressure has been released, carefully remove the lid. Turn the Instant Pot off.
Use an immersion blender to blend the soup until it is super smooth.
Tip: I used a food processor to chop my onions and carrots so that they were very fine, plus it saves time. I also loathe chopping onions.
