Apple picking season is upon us and what better way to celebrate than making some apple cinnamon muffins! Yes! Warm apples and cinnamon baking in the oven… it smells like heaven! These apple cinnamon muffins were a big hit at my house, everyone loved them! Seriously, what’s not to love? They are moist, not too sweet, and they are absolutely delicious! My daughter kept asking for another one and relentlessly reminding me to put one in her lunch box… “Yes, my darling, I shall put one in your lunch box.” These are the moments that make me smile.
These apple cinnamon muffins are pretty quick and easy to make. I used all organic ingredients to make my muffins, so I feel like these muffins are at least somewhat healthy. I chose to use Fuji apples to make my muffins. You can use whichever type of apple that you prefer, but I do highly recommend Fuji apples. They are my personal favorite! I like them so much that I planted a Fuji apple tree in my backyard! And look… it is actually producing apples… real apples! I do not have a “green thumb” so this is very exciting!

Apple Cinnamon Muffin Ingredients
- 2 cups all-purpose flour – I use organic unbleached all purpose flour.
- 3/4 cup light brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon kosher salt
- 1/2 cup milk – I used 2% organic milk.
- 1 cup unsweetened applesauce
- 2 large eggs
- 4 tablespoons unsalted butter – melted or softened
- 2 teaspoons pure vanilla extract
- 1 cup apples – one medium to large apple peeled and chopped.
How to make Apple Cinnamon Muffins
First, preheat your oven to 375 degrees Fahrenheit. Spray a 12 cup muffin pan with nonstick cooking spray or use muffin liners. Wash, peel and chop your apple and set aside. The chopped apple is added to the batter last.
In a large mixing bowl, combine all dry ingredients and mix well. In a separate bowl, add the rest of the ingredients, which are the “wet” ingredients, and mix well. Add the “wet mixture” to the dry mixture bowl and mix well to combine all of the ingredients. Once the muffin batter is mixed, gently fold in the chopped apples.
This recipe should fill 12 muffin cups. Fill each cup to just below the top of the cup or about 7/8 full. Place the muffin pan into the preheated oven, on the middle rack, and bake at 375 degrees Fahrenheit for 15 – 18 minutes.
Once the muffins are finished baking, carefully remove them from the oven and allow them to cool for 5 to 10 minutes.
