Spicy Tuna Cucumber Bites make a great appetizer, snack or an easy low carb lunch. They are simple, tasty, cool and refreshing. These tasty bites are perfect for summer!
I love spicy tuna rolls! Am I able to eat sushi whenever I want? Unfortunately not. What I can eat whenever I want are these Spicy Tuna Cucumber Bites! No, they are not spicy tuna rolls. However, they are cheap, quick, easy, healthy, low-carb and keto friendly. Plus, I almost always have all of the ingredients on hand. You can whip them up in 5 minutes and you don’t have to worry about finding sushi grade tuna at the store. Not to mention, canned tuna fish is pretty inexpensive comparatively.

How to make Spicy Tuna Cucumber Bites
First, drain your tuna well. Then, add all of the ingredients, except the cucumber, to a bowl and mix well. If you have time or are making ahead, cover the spicy tuna and refrigerate for 1 hour, or until you are ready to use. This allows the flavors to meld and the tuna become colder. If you do not have time, just skip this step.
Wash and slice your cucumber into circles. You can slice off the edges of the skin to turn them into squares if you would like. Place the slices on a plate or serving tray. Put a spoonful of the spicy tuna mixture on top of each cucumber slice. Serve immediately.
