Cilantro Lime Cauliflower Rice cooked in the oven makes a delicious and healthy keto side dish that will complement so many meals!
This easy cilantro lime riced cauliflower recipe comes out of the oven flavorful, perfectly cooked, and is ready in less than 30 minutes! Cauliflower rice is a wonderful alternative to regular rice since it is much more nutritious and it is also much lower in both calories and carbohydrates. Cooking the cauliflower rice in the oven on a sheet pan is quick, easy, and efficient. Plus, it makes the clean-up process almost non-existent, which I truly appreciate at the end of the day.
Cilantro Lime Cauliflower Rice pairs perfectly with Mexican meals but makes an excellent side dish for so many other dishes as well. It is great served with chicken and seafood dishes. I also like to add avocado to my bowl to give it a little creaminess and some healthy fat. However you choose to serve it, I hope that you enjoy the sheet pan cauliflower rice!
Cilantro Lime Cauliflower Rice Ingredients
- cauliflower – fresh riced cauliflower. You can buy pre-riced cauliflower or rice cauliflower florets in a food processor. You can use defrosted frozen cauliflower rice with this recipe but fresh cauliflower is best.
- avocado oil – olive oil can be used as a substitute. Avocado oil does have a higher smoke point, so I highly recommend it for baking at higher temperatures.
- garlic powder – do not use garlic salt.
- lime juice – fresh lime juice is best but you can use bottled juice as well. I serve mine with lime wedges on the side to squeeze extra juice over the rice.
- cilantro – chopped fresh cilantro.
- salt & pepper
How to Make Sheet Pan Cilantro Lime Cauliflower Rice in the Oven
First, preheat your oven to 400 degrees Fahrenheit. Line a large, rimmed sheet pan with foil and spray with non-stick cooking spray. Place the riced cauliflower onto the prepared baking sheet. Note: If your cauliflower is not already “riced”, you can do it yourself a couple of different ways. Use a food processor to grate cauliflower florets into a “rice” texture by pulsing for 5 seconds at a time until you reach your desired consistency.
Add the garlic powder, salt, and pepper to a small bowl then pour in the avocado oil and lime juice, then stir to combine. Pour the mixture over the riced cauliflower and stir to coat, then spread the cauliflower rice into an even layer. Note: You can also omit the salt and pepper from the oil mixture and season the cauliflower rice to your personal preference once it has finished baking.
Bake the cauliflower at 400 degrees Fahrenheit for 20 – 25 minutes, stirring halfway through so that it cooks evenly. The cauliflower should be soft and tender.
Once the cauliflower rice has finished baking, remove from the oven, sprinkle with the fresh chopped cilantro, and stir to combine. Transfer the cauliflower rice to a serving dish and serve with lime wedges on the side, for squeezing over the cauliflower, if desired.

- 24 oz. cauliflower riced fresh cauliflower*
- 2 tablespoons avocado oil or olive oil.
- 2 tablespoons lime juice juice of 2 limes.
- 1 teaspoon garlic powder
- 1 teaspoon salt or to taste*
- 1/2 teaspoon pepper or to taste*
- 2 tablespoons cilantro freshly chopped, add more to taste.
