Almond Flax Waffles

These protein-packed power waffles are perfect for a sugar-free, dairy-free, grain-free, gluten-free, low-carb, diabetic, or keto diet. They are also a great meal option for before or after a workout since will give you plenty of energy and help build muscle. They are very filling and make a satisfying breakfast, lunch, or dinner, and are wonderful for a weekend brunch or “Waffle Wednesday”!

While creating and testing this almond flax waffle recipe, I actually did eat these waffles for breakfast, lunch, and dinner. My daughter loves waffles and I wanted to be able to enjoy them with her. Since I no longer eat any gluten or grains, I wanted to create the perfect healthy waffle recipe that did not use any grains, including baking powder since it is made from grain. After making and eating copious amounts of waffles, I did it, and these almond flax waffles are delicious! However, I ate so many waffles that now I feel like a big gluttonous waffle! It was fun at first, but then it was like Waffles, Waffles, Waffles! So many Waffles! Now I need to go eat a salad.

Since I was eating so many waffles, I tried various waffle toppings and add-ins for variety. I even tossed in some spinach at one point since I felt like my body needed something green. The almond flax waffle batter is quick and easy to make, and you can easily adapt this recipe to make lots of waffle variations including sweet and savory waffles. These waffles are so good that I can eat them plain. My daughter just likes butter on her waffles. I like to get creative, so instead of just topping your waffles with butter, try topping them with some healthy berries, chopped Maple Bourbon Pecans, or some avocado for an avocado toast variation. Keto Waffle Mix Ingredients

These almond flax waffle ingredients are all keto-approved. Almond flax waffles are super nutritious and packed with protein, fiber, vitamins, minerals, antioxidants, and heart-healthy omega-3s.

  • almond flour – superfine blanched almond flour.
  • almond milk – I use unsweetened plain almond milk, but you can use sweetened or vanilla almond milk as well.
  • flax seed – ground flaxseed meal. You can use golden or brown flax. They are almost identical other than the taste and color. 
    • brown flax – This is the most common type of flaxseed and can be found in most grocery stores. 
    • golden flax – This produces a lighter waffle and works best for sweet waffle variations since golden flaxseeds have a buttery and slightly sweet flavor.
  • eggs – I use large organic cage-free eggs.
  • baking soda – This helps the waffles rise. I used baking soda instead of baking powder since baking soda is grain-free.
  • salt – I used fine pink Himalayan salt.
  • stevia – or granulated sweetener of your choice. You can add extra for a sweeter waffle.

Optional:

  • avocado oil – makes a crispier waffle that is more moist. I highly recommend using it to make your waffles. You can use other oils as a substitute but avocado oil is healthy and has a high smoke point which is perfect for the waffle maker.
  • vanilla – pure vanilla extract. I only use this if I want a sweeter waffle. I would not add it to a savory waffle.
  • Chai Spice Mix – This adds a wonderful warm spice flavor to waffles!

How to Make Almond Flaxseed Waffles

First, make the almond flaxseed waffle batter. Add the eggs and almond milk to a mixing bowl and whisk to combine. Stir in the avocado oil and/or vanilla if you are using them. 

Next, stir in the salt, stevia, and baking soda. Finally, add the almond flour and flaxseed and whisk until smooth. Let the batter sit for 10 minutes to thicken, then stir one last time. Note: The waffle batter may seem thin at first, but it will thicken as the flax absorbs the liquid. Do not skip this step if you want perfect waffles. Tip: If the waffle batter is too thick after sitting for 10 minutes, add an additional tablespoon of almond milk. If it is too thin, add an additional tablespoon of almond flour.

Once the batter is ready, preheat your waffle maker, then lightly spray with nonstick cooking spray. (I use a pure avocado oil spray.) 

Pour the waffle batter into the prepared waffle maker and cook to your liking. Repeat until the batter is gone. The amount of waffles you make will vary depending on the size of your waffle maker. Serve immediately with any toppings that you would like to add. Enjoy!

Almond Flaxseed Waffles

Storage: Leftovers can be stored in the refrigerator, in an airtight container, for about 5 days. You can also store them for about 2 months longer in the freezer by placing the cooled waffles in a freezer bag. Just pop them in the toaster to reheat.
