Spinach Mashed Cauliflower makes a delicious and healthy low-carb side dish! This garlic mashed cauliflower and spinach is low in carbohydrates but packed with nutrients and flavor!

Cauliflower is the perfect low carb substitute for potatoes! I actually prefer the taste and texture of cauliflower when it comes to mash. Even my very picky daughter loves it! Quick, easy and ready in 10 minutes. This creamy mashed cauliflower with spinach is a delicious and easy way to get a healthy dose of veggies!

This Mashed Cauliflower and Spinach is a wonderful compliment to so many meals. It is kind of like a low carb twist on Irish colcannon. Colcannon is a traditional Irish dish of mashed potatoes mixed with greens. This very green and keto version would be great served with Corned Beef and Cabbage on St. Patrick’s Day or any other day of the year. I hope that you all enjoy!

Spinach Mashed Cauliflower Ingredients

  • fresh cauliflower florets – 1 head of cauliflower cut into florets or to keep it easy, you can use bags of pre-cut fresh cauliflower.
  • fresh baby spinach – large stems removed.
  • garlic – chopped or minced
  • unsalted butter
  • cream cheese
  • kosher salt
  • freshly ground pepper
  • grated parmesan cheese

How to make Mashed Cauliflower and Spinach

This Mashed Cauliflower and Spinach truly is so quick and easy to make! You can have it ready in 10 minutes with a food processor.

Mashed Cauliflower and Spinach

First, steam the cauliflower until soft and tender. The quick and easy way is to put the chopped cauliflower into a microwave-safe container with a lid. Add 1 tablespoon of water. Place it in the microwave and cook on high for about 5 minutes. If you get the bags of fresh precut cauliflower, you can just leave the cauliflower in the bag and cook them in the microwave as well.

While the cauliflower is in the microwave, add the butter to a small pan and melt over medium heat. Add the minced garlic to the pan and cook for 30 seconds to 1 minute or until fragrant. Remove from heat.

Add the cooked cauliflower, the melted butter and garlic from the pan, and the rest of the ingredients into the bowl of your food processor and blend in 30-second intervals until it is smooth and creamy or you reach your desired consistency. Do a taste test and season with additional salt and pepper if needed.

Transfer the spinach mashed cauliflower to a dish and serve immediately or refrigerate in an airtight container to save for later. This recipe is great reheated!
