Honey Garlic Roasted Carrots are one of my favorite healthy side dishes. They are so easy to make and have so much flavor! I love roasting vegetables. Roasting vegetables is so easy and they always taste better, in my humble opinion. Roasting carrots really brings out their sweetness which I love but it is also why garlic works so well to balance out the flavors.
I always have all of these ingredients in my kitchen and I am also able to use all organic ingredients in this recipe, which I love. Since I always have everything I need to make these carrots on hand, they are a quick and easy side dish for me to add on to so many meals. As simple as they are, these honey garlic roasted carrots really do taste fantastic! Plus, carrots are loaded with anti-oxidants, vitamins and fiber… you have to love that!

Ingredients needed to make Honey Garlic Roasted Carrots:
- 1 lb. bag of baby carrots – I always use organic baby carrots
- 2 tbsp honey – I use organic honey
- 2 tbsp olive oil – I use organic olive oil
- 1 tsp minced garlic / 2 cloves – I use organic minced garlic
- 1/8 tsp nutmeg – I use organic nutmeg
- 1/8 tsp cinnamon – I use organic cinnamon
- salt and pepper to taste – I use sea salt and freshly ground black pepper
How to make Honey Garlic Roasted Carrots:
First, preheat your oven to either 425 or 450 degrees Fahrenheit, depending on how much “char” you would like on your carrots. I like both ways but the carrots in the picture were roasted at 450 to give you an example. Line a baking sheet with tin foil and spray with nonstick cooking spray. In a gallon size storage bag, add the honey, olive oil, garlic, cinnamon and nutmeg, then shake to mix ingredients. Add the baby carrots the bag and shake to coat the carrots. Pour onto the baking sheet and season with salt and pepper to your liking. Place the carrots into the preheated oven for 30 minutes, stirring halfway through. Serve hot and enjoy!
